Country Cooking for our crew today. 2 lbs of Camellia Brand Field Peas with Tomato and Ham, Corn Bread and Biscuits, Fired Okra, and Fried Chicken, Shawnie and Robert will be here at 2:00 and I have been up and cooking since 7 am. Field Peas recipe is MY OWN. Field Peas with Tomato and Ham Recipe: (Reduce spices if your only cooking a 1 pound bag) Ingredients: 2 pounds of Camellia Brand Field Peas. 8-10 cups of water 4 cups beef broth 1 28 oz can diced tomatoes 1 Tablespoon Tony Chacheres Creole Seasoning 1 Tablespoon Garlic Powder 1 Tablespoon Onion Powder 1 Teaspoon Black Pepper 2 pounds Diced and Trimmed Ham. Directions: Soak Peas over night on 8 cups water. 1.) Place Soaked Field Peas into a large deep pot, 2.) add Beef Broth 3.) Bring to a rolling boil, cover and reduce heat to a simmering boil for 2 hours, stirring frequently and checking your water level. 4.) add canned diced tomatoes and all seasonings. Stir and continue to simmer until peas are tender. 5.) fry the diced ham in a non-stick skillet (I use cast iron) on medium high heat, until it cooks out some of the water ( a couple teapooons). 6.) add Diced ham and drippings to the pot of Field Peas. Serve over white rice.
