DOUBLE CHOC MINT RAW CHEESECAKE RECIPE. (see previous post for pictures) CRUST 1 cup of pecans or nut of choice 3-4 medjool dates 1/2 cup cacao powder pinch sea salt 1 teaspoon vanilla Whiz all CRUST ingredients up in a food processor. Push down into mini cheesecake pans or into a larger pan - easier if have one of those springform ones. FILLING 2 cups of cashews soaked for 15 mins 1/2 cup coconut oil (liquid) 1/4-1/2 cup maple syrup or coconut nectar depending on how sweet you like things 1/2 cup water good handful of mint leaves or a few drops of organic mint essence...can also try grated orange rind. 2 teaspoons vanilla 3/4 cup raw cacao Whiz up cashews, maple syrup, vanilla and water for a little to get it creamy. Then add the rest of the ingredients. Blend till smoothish. Put on top of crust and whack in the freezer until set..only takes about 20 mins if have good freezer! nom nom nom. note: this is one of those meals that falls in the 20% category...typically eaten with someone who loves food as much as you. ha x
