Fruit glut recipe: Fruit sponge 1 cup SR flour (can be gluten free) 1 cup sugar 1 egg 1/2 cup milk Vanilla essence as liked Small knob butter 20-30 gms Fruit can be virtually any - 750 gms approximately. Apple, pear, plum, peach, apricots, figs, blueberries, nectarines, ... Put fruit on to cook. When cooked and boiling hot place in a casserole dish with lots of room for the topping. Melt butter. Add everything else (not fruit) and mix well. Put in oven 180℃ for about 30 minutes until cooked through. Top will be golden and sides will have shrunk from the edge of the pan. This can also be cooked in a microwave for approximately 12 minutes on medium. It can also be cooked in a saucepan on top of the stove - use a pan with a tight fitting lid. Allow room for expansion of the sponge. Takes about 20 minutes on lowest temperature. WARNING: this will turn out gluggy if the fruit isnt boiling when the sponge is poured over the top. Has been a family favorite for 30+ years.
