Got this super yummy recipe from my awesome friend Yvette Toro Barrow ~Breakfast cookies~ 3 large bananas 2 cups organic certified gluten free oats 2/3 cup almond flour or meal 1 teaspoon gluten free baking powder ½ sea salt ¼ cup warmed coconut oil 2/3 cup organic unsweetened shredded coconut ½ walnuts or any chopped nuts you prefer ¼ cacao chips or any fruit or mix in your family likes (apples, cranberries etc…) Mash Bananas, add oats, almond meal, baking powder, sea salt and pour in coconut oil. Mix well, stir in coconut and then add you nuts and cacao chips (or other mix in choice.) Roll into golf size balls and bake @ 350 degrees for 12-18 min. (They will not brown much, I just keep checking for firmness and brown bottoms. :) )
