How do you braise meat? Let me tell you about this technique that can be used on less tender cuts. 1. Preheat the oven to 300F 2. Have the meat already thawed. Now pat it dry with paper towels (helps get a nice brown crust in the next step) 3. Heat a small amount of oil in a heavy-bottomed oven-proof pan.(e.g., Dutch oven) Wait until the oil is very hot then add the meat and brown on all sides. Remove the meat and set aside. 4. Lower the heat to medium and add some chopped onion or garlic. Saute until veggies start to soften. 5. Add a little liquid to the pan to deglaze it. This can be wine, broth, water, vinegar. You want to remove the little bits of meat and veggies stuck to the sides and bottom of the pan and get them mixed into the liquid. Bring the liquid to a simmer. 6. Now add the meat back in. Add tomatoes if desired. 7. Add more water until the meat is just barely covered. Bring to a simmer. 8. Now cover the pot and transfer to the 300 F oven. Cook for 1-5 hours until the meat is very tender. About 1 hour per pound. 9. Make a gravy if desired. 10. Serve. Yum.
