Ill call this the Kitchen Sink Stew...cause its everything but the kitchen sink thrown in there to use up what was around. It would be a great idea to use up some turkey this week. Even my two-year old almost finished a bowl! Heres what I did... 2 tablespoons olive oil 1/2 medium onion, chopped 3 garlic cloves, crushed 5-6 cups chicken broth 1 yam diced 1 small white potato 1/2 cup chopped carrot 2 bay leaves 3 cups chopped kale or spinach 1 (14.5-once) can black beans 1 cup chopped or shredded cooked chicken or turkey 1 (14.5-ounce) can fire roasted diced tomatoes, drained 1 teaspoon dried basil 1/2 teaspoon dried thyme 1/2 teaspoon black pepper parmesan cheese Preparation Heat oil in a Dutch oven over medium-high heat. Add onion and garlic; sauté 5 minutes. Add broth, potatoes, carrot, and bay leaves; bring to a boil. Partially cover, reduce heat, and simmer 20 minutes, until potatoes are tender. Add kale or spinach (we did a mix of both baby kale and spinach), beans, chicken or turkey; Stir in tomatoes, basil, thyme, and pepper bring to a boil. Reduce heat; simmer 10-15 minutes. Discard bay leaves. Sprinkle with parmesan cheese. We served with toast and Barbera. An idea...instead if yam/potato you could add a cup of leftover mashed potatoes from thanksgiving. It would make it creamy and less of a broth but super yummy I bet.h
