It is a hot summer day. There is a balance in making a Cake: The sugar should equal the flour, the shortening should equal the eggs, the liquids (eggs and milk) should equal the flour. For me , in a huge mixing bowl that equates to: 50lbs of flour and sugar, 18 lbs of eggs and shortening, and 4 gallons milk(32lbs) + the 18lbs of eggs equals the fifty lbs of flour, so that is the perfect balance. I made a zuqueeni cake today with a whipped butter maple frosting. It was the cats meow. I had to add an additional pound of baking powder because the zuqueeni is heavy to help the cake rise, and a little less milk because the zuqueeni has water content, I had to keep the balance of liquids to flour. I compared the success of that cake to the success in life by simply following a balance in events, actions, and thoughts. the cake turned out moist, nicely fluffy, with a perfect cake texture. It was a success. Life is like a good cake! Have a great day and look to balance the recipe and you will succeed..Love Dave
