It is getting easier to scratch out great meals and desserts as I am going longer and longer times of just not having any money to implement what I thought was necessary staples. I have adjusted to no milk, no eggs, no cornmeal, very little meat, no butters of margarines or any kind of usual condiment and quick start helpers and soups! and thats just the beginning! I made one of the yummiest desserts today and my family couldnt get enough! Dont ask for a recipe, i dont use them! I just throw stuff in till it looks right. the way my mama, and grandma taught me! I called them fruit biscuits. Self-rising flour, equal amount of powdered sugar, salt, coconut oil all cut in together. a handful of the following; dried sweetened strawberry, orange, and fig granules (like diced dried, crunchy not leathery). Then about 12 pitted dates, a handful of raisins. toss it all so all the fruit gets covered in the flour/sugar mix. add a little cold water at a time till all the dry is moisty and makes a nice ball of dough, but not icky sticky. coconut oil in a long baking pan, and all over your hands! form balls about the size of a golf ball and pat them lightly in pan making sure the coconut oil is all over your hands and the balls! space them nice as they will rise. thats it, throw them in a ph350 oven for about 10-15 minutes or until just set like a biscuit since they ARE biscuits and slightly beginning to be golden brown on the bottom. Here we go w/ the coconut oil again, but I lightly top each biscuit with some while hot. Makes the biscuit more tender. these are so perfect! i added my special touch of a hot carmel crunch glaze. it sets firm instantly to make the larapinist eats you ever had. I took a bunch of pics but i cant download from my phone. bad drivers! I will have to read my SD card tmw! I have been making a lot of biscuits, sweet, cinnamon, maple, cheese, garlic, sausage stuffed etc. but everything is made with coconut oil. I am sold on its benefits and taste!
