JULEKALENDER 2014 – DAG 6 Behind door number 6 is a lager beer we call SVAL. This bottle is from batch # 29 and was the first (and so far, only) large-scale brew of SVAL we produced, brewed on February 18, 2014. We use lemongrass in SVAL to provide a hint of spice and citrus flavor. As predominantly ale brewers, we like flavors in our beer. In ale, yeast can provide these flavors, lager yeast does not, that’s why we add lemongrass to SVAL. The problem with this batch of SVAL is that there is more a “shout” of lemongrass taste as opposed to a whisper. This was not how we wanted SVAL to be. Because the lemongrass dominates the flavor of this batch, we only sell it in our store in Åmotsdal (Seljord kommune, Telemark). We want to be able to explain what to expect. Traditionally, lager beer pairs best with foods without stronger tastes; chicken, salmon/seafood and mild cheeses. SVAL however, because of the lemongrass “punch”, probably pairs better with foods with more taste; Mexican dishes, indian or thai foods and flavorful cheeses. SVAL is best served ice cold, between 3-5 C.
