Monday Medley ******************************** Dinner today was albeit indulgent given the fact that this was a week day :) Pan seared Halibut (Butter, Lemon juice, Salt and pepper) with pan tossed carrot, broccoli, fingerling potatoes, beans and cheesy saffron rice with a grilled cipollini onion Recipe for Pan Seared Halibut ------------------------------------------ Take 1/4 lb of a halibut fillet and rub it with salt, pepper and lemon juice. Heat 1 tablespoon of butter in a pan in low heat and allow the halibut to cook for 3-4 minutes. Flip over and cook on the other side. Cover and cook for another 3-4 minutes in very low heat. Sprinkle more pepper and serve! I used fresh halibut and so it cooked easily. Recipe for Cheesy Saffron Rice ----------------------------------------- Heat 1 tablespoon of oil, throw in 1/2 a cup of pre-cooked rice (colored using 2 teaspoon of saffron water prepared by soaking saffron for 30 minutes in milk )and fry for 1-2 minutes. Sprinkle some salt and grated cheese and mix well! For the carrots, broccoli, fingerling potatoes and beans I just shallow fried them covered in a pan with some oil.
