Now that the weather in SoFla is starting to cool off a little bit (it was 62 degrees F when I woke up this morning) it is time to make a gumbo. Tomorrow, surrounding the Miami Dolphins game, there will a seafood gumbo event at the home of my friend, Michelle Brown. Apparently I am the only one who can actually make a good seafood gumbo and it is a task which I take seriously. Gumbo is important! SO, I decided to make my roux on Friday. I chose the old fashioned, stove top method with flour, olive oil, vegetable oil, some bacon grease and real butter. Usually, that is a winning combination. It took nearly an hour to cook this roux. It MUST be stirred constantly or it will burn and taste bad. Despite my best work and what I THOUGHT was a good roux, this morning, I smelled a slight bit of burned aroma...just a tiny bit. But, it did not smell right, so today I start over! Maybe I should cook it even slower this time. My best roux usually takes more than an hour. Apparently there is a fairly big crowd to feed so it has to be done right!
