Ok, everyone is talking about Kale. But not everyone knows what to do with it. Here is a sensational tasting Kale Salad recipe. I know you are going to love it! KALE WALDORF SALAD 4 CUPS KALE DERIBBED AND FINELY CHOPPED 1 LARGE HARD APPLE (SUCH AS FUJI OR HONEYCRISP) CUT INTO A MEDIUM DICE AND DIVIDED 1 CUP THINLY SLICED CELERY ¾ CUP PLUS for salad ( ¼ CUP TOASTED WALNUTS CHOPPED for blending /dressing) ¼ CUP PLUS (2 TABLESPOONS RAISINS DIVIDED for blending/dressing) 2 TABLESPOONS DIJON MUSTARD 1 TABLESPOON WALNUT OR MACADAMIA OIL (Hard to find walnut oil, Macadamia is in supermarkets everywhere) 2 TABLESPOONS WATER 1 TABLESPOON RED WINE VINEGAR SALT & PEPPER TO TASTE 1. In a large bowl, combine kale, half the apple, celery, ¾ cup of the walnuts and ¼ cup of the raisins. Toss to combine 2. In the bowl of a food processor or in a high power blender, add ¼ cup walnuts, 2 tablespoons raisins, mustard, walnut or macadamia oil, water vinegar, salt and pepper. Puree until well combined and slightly thick, adding additional water if necessary to keep a dressing like consistency. 3. Drizzle dressing over kale mixture, tossing gently to combine.
