RECIPE: Vegan Peach/Blueberry Cobbler ¼ cup plus 2 T of margarine or vegan buttery spread 1 ¼ cups of sugar (divided) ¾ cups of all-purpose flour 2 tsp. baking powder Dash of salt ¾ cup of almond milk 2 cups sliced fresh peaches Big handful of frozen blueberries Preheat oven to 350 degrees. Melt margarine in a 2-quart baking dish. Combine ¾ cup of sugar, flour, baking powder, and salt; add almond milk and stir until mixed. Pour batter over melted margarine in baking dish, but DO NOT stir. In a separate bowl, combine peaches, blueberries, and remaining ½ cup of sugar; spoon over the batter. DO NOT stir. Bake for 1 hour. Yield: 6 to 8 servings.
