Slow cooker cupcakes, made by my kids. Kept them entertained today. Recipe 300g good-quality dark chocolate, roughly chopped 125g unsalted butter, roughly chopped 1 3/4 cups (260g) self-raising flour 1/4 teaspoon baking powder 1/4 cup good-quality cocoa powder 1/4 cup (50g) firmly packed brown sugar 3/4 cup (185ml) milk 2 eggs Place the chocolate and the butter in a bowl over a pan of gently simmering water (dont let water touch the bowl) and stir occasionally until melted. Set aside to cool slightly. Sift flour, baking powder and cocoa into a large bowl and stir in sugar. In a separate bowl, whisk together milk and eggs, then add to dry ingredients and stir in along with chocolate mixture. Spoon into muffin cups ( this recipe makes about 12), filling about 2/3 full and cook on high, with tea towel under the old for 1 1/2 hours, or until skewer come out clean. Ice and decorate as desired ( we used butter cream icing).
