Soba so good? Channel Japan introduces soba restaurant chains in Japan who are coming up with more ways to serve good soba at affordable prices along with the saturated market. Soba is a noodle dish native to Japan. And now, various restaurant chains are starting to step into this highly saturated market. Competition is fierce and companies are being forced to come up with novel ideas to draw in discerning customers. One chain produces its own ingredients, including the ducks for meat and buckwheat for soba, while another is sparing no expense to serve high-end fare, with a cost ratio reaching 90 percent.
