That We May Nourish Life: Upaya Chef Sandra McDonald My approach to cooking is rooted in reverence for raw materials (the colors! the aromas! the textures !) Food is so much more than fuel to keep us going, and I consider the act of cooking a serious and joyful responsibility. I believe that consciously and respectfully raised and prepared food is crucial for all of us; a sacrament. On Santa Fe Local Food There are several garden zones at Upaya, which provide produce primarily to serve the resident community, and supplement the bulk produce we source from a fantastic purveyor of organic goods out of San Francisco – Veritable Vegetables. We buy most of our dry goods through the same provider that supplies many local retailer’s bulk goods sections (United), and dried mushrooms from another fantastic company – Fungus Among Us. We have occasionally participated in a local CSA, purchased from the farm to restaurant program and the farmer’s market, and shop locally at Montanita Co-op for smaller quantities.
