Un-Stuffed Peppers (This is so simple) Ingredients: 1 lb. GMO Free Soy Tofu 1 small onion, diced 1 large bell pepper, diced (red, yellow, orange or green) 1 can (29 oz.) diced tomatoes 1 (10 oz) can tomato sauce 1 (14 0z) Veggie broth 2 cups cooked rice (brown) 1 tsp. garlic powder sea salt & cayanne pepper, to taste Optional: before serving top with shredded cheddar cheese Directions: In a large pot, brown and crumble Tofu along with diced green peppers and onion over medium-high heat. When cooked thru drain excess grease. Add diced tomatoes, beef broth, tomato sauce and stir all well. Then add seasonings; garlic powder, salt & pepper (to taste). Cover and let soup simmer on low-medium heat for about 30 minutes to let all the flavors blend. Just before serving add cooked rice.
