We have not eaten our bananas again so after the telling off, here´s a recipe to use them up!! It´s a super recipe for a snack bar - fruit, nuts and that´s it. It´s got natural sugar so good for us and gives us energy. Nuts as carbs to fill us up and a small amount of coconut oil to give us essential fat. All bound together with our over ripe bananas (actually, they´re in the best condition for us to eat - full of goodness) and some almond flour with arrowroot starch. What we need is: 1 cup of cashews - washed, soaked & dried. 1/2 cup raisins 1/2 cup prunes (add any fruit you like basically. I used prunes for the heavy, reminiscent taste of Morocco) 1 cup almond flour 1/2 cup arrowroot starch 2 overripe bananas (got them used!) 1. Set oven to heat at 150´F (66´C) 2. Add dry fruit and mix with the flour and starch. 3. Mash bananas. 4. Add bananas to the flour and fruit. 5. Add a dribble of coconut oil, a tbspn will do. 6. Mix everything together 7. Grease an oven dish or tray, I used coconut oil again. 8. Shape your mix into whatever form takes your fancy. 9. Bring back the oven temp to 135´F (57´C) 10. Place tray into the centre of the oven and cook for @40 minutes. The top should be nice and brown. 11. Remove from oven, let it cool and then give it a go. This should, if husbanded carefully, last a week. Make sure little fingers don´t go near! Enjoy my friends and let me know if you try it!
