While my elder daughter Shriti Khandelwal was away to Mumbai and I was baby sitting...I had a whole lot of time on my hands...Since Nandini went off to school early in the morning and came back only in the evening .... So I decided to make some achaar ! Found some nice karelas in the store and I remembered the taste of Bitter Gourd Pickle which we had in Loreto in the 70s...so I made some. Today we all tasted it and they said its good so I guess I can put it up now .....since no one seems to have been sick !!!! I made just one bottle to begin with... KARELA ACHAAR 4 nice firm and fresh karelas washed and cut into roundels 12 garlic cloves chopped fine Take one tablespoon of fine rye and dry grind coarsely along with half a tsp of dana methi two tbsp of saunf . Dont do it too fine. Salt Hing Chilly powder/ haldi powder Mustard oil Cut a couple of fat green chillis In a pot boil some water..Once it boils put a colander over it and steam the cut karelas for about 15 minutes...giving it a toss every now and then. If you have a steamer do it in that...but make it 10 minutes then ! Now try and squeeze out any moisture from the roundels. I just chucked it in the microwave for a couple of circles !! In a kadhai add five tbsp of mustard oil add the hing and toss in the garlic after a few seconds toss in the karela , the chillis and all the masala and salt and mix well over a high flame for about 4/5 minutes. Cool and then store in a nice clean bottle. Goes real well with anything If ANU can COOK so can YOU !
