Your Grandma was right to feed you chicken soup as a pick me up. Im just making turkey curry with my leftover meat and broth. Bone broth is packed with minerals and amino acids in an easily absorbable form. Collagen, a protein extracted from the connective tissue is broken down into gelatin, which gives broth its characteristic jelly consistency. This gelatin helps to heal the gut (particularly leaky gut) and is used in nutritional therapy for digestive, inflammatory and autoimmune disorders. In addition, its wonderful properties help with joint pain, prevention of bone loss, muscle repair, immune function and for healthy skin, hair and nails (who recalls eating jelly cubes as a teenager?). Make sure you use organic, grass-fed, free-range animal bones, not factory farmed animals to maximise nutrients and reduce antibiotic exposure. Cook on the hob or a slow cooker for as many hours as you can, up to 24 hours in a slow cooker. I usually manage 6 hours.
