9. Bridge rolls 450g white bread flour 1 tsp salt 25g butter 2 tsp dried yeast 350ml warmed milk Beaten egg to glaze Place flour and saslt in bowl. Rub in the butter and stir in the yeast. Add milk and mix to form fairly soft dough. Knead well for 10min. Place in oiled bowl and cover. Let rise to doubled in size. Knead lightly. Cut into 24 equal sized pieces. Form into tapered rol and place fairly close together on a greased baking sheet. Cover and let rise until doubled in size. Preheat oven to 230 (gas 8). Brush rolls with egg and bake 15-20min. Cool on wire rack. L
