A Marathi Delicacy .,,,,,,,,,,Kaju Kothimbir Vadi Made this today for lunch as a side dish , otherwise this is usually a tea time snack in Maharashtra . Kothimbir means , coriander and vadi means , sort of a cutlet or pakoras and kaju is cashew nuts , the receipe is very simple . Ingredients : 2 & 1/2 cups of Besan / Bengal gram flour 40 nos . Of Cashew nuts , halved in two 2Tbsp of very finely chopped ginger 4 Tbsp of finely chopped green chillies 6 Tbsp of chopped green coriander 1Tsp of turmeric 1 Tsp of red chilli powder 4 Tbsp of finely chopped green spinach Oil Salt Mix all the ingredients , Except the oil , with water and make a thick pourable paste . Take oil in a pan , heat the oil and pour the mixture , cook on slow and medium flame , continously stiring for 20 mins , till it forms a dough . Apply oil on a flat plate and spread it evenly , 1 inch thick and let it cool and set ( I had put it in the fridge for 30 mins . ) . After it has cooled down cut it into 1 inch by 2 inch pieces and shallow fry them on a non stick pan , as shown in the picture .
