A link to the Haxby Bakers website foodforthoughthaxby.co.uk/page2.htm and Love Bread CIC in Leeds. lovebread.org.uk/workshops/ I learned about slow fermentation of yeast and why it is so much better for us yesterday. Basically - nature does all the work, makes it taste like bread (without needing to add bread flavour - as some commercial brands do!), there is a whole load more nutrition and humans find it much more easier to digest. Oh, and it supports traditional skills, and a local bakery! Another great slow baker is Love Bread CIC in Brighouse Leeds - They have some great courses coming up....
