A sampling of this weeks menu~TL, gluten-free pizza ( with or w/out Daiya cheese), I used broccoli, yellow pepper, onion, garlic, olives, and mushrooms for the topping. Nutritional yeast sprinkled on top works really well, especially if not using any cheese substitute. BL, Mexican style soup with lots of cilantro, those are jalapeños on top, carrots, potatoes, tomatoes, quinoa and rice. I love using Rapunzel Veggie stock. TR, Kale salad w/ cherry tomatoes in balsamic vinaigrette and hummus on the side. MR, Tofu/Veggie stir fry in coconut oil. BR, Beet/Celery/Carrot/lime juice and Celery/kale/apple/ginger/lemon juice. All these dishes took about 20 minutes to prepare. Easy, healthy, and delicious.
