Ack!!!! Recipe Thursday was such a great idea and then I got busy and forgot!!! People need to call me out on that!!!! Ok here goes Not a really a recipe but its what I do for lunch everyday. I love salad but I hate lettuce. My solution, I buy arugula (reminds of the grocery store scene in My Blue Heaven EVERY time I buy it) and baby spinach (leafy greens!!) and use that instead of lettuce. It comes in a container and prewashed, easy peasy. I usually toss in cherry tomatoes, sometimes carrots, celery, onion, cucumber. It all depends on my mood. Then a hard boiled egg (protein!!) and come croutons. A splash of EVOO and a bigger splash of balsamic vinegar, viola!! Salad, me style 󾰀
