Apparently the note I created with the cloud bread experienced an error and disappeared. For all of you who asked me for the recipe.... No Carb Cloud Bread Recipe: 4 eggs, (yolks and egg whites thoroughly separated) 4 tablespoons cream cheese 1 teaspoon cream of tartar 1 packet of stevia (or zero calorie sweetener of your choice) 2 bowls 1st bowl With a hand mixer or kitchen aid, beat on high... egg whites, sweetener, Cream of Tarter until stiff peaks form much like a Meringue. Set aside. 2nd Bowl Whip, Egg yolks, cream cheese (not softened), You can add Season salt and black pepper, etc. even pepper flakes if you like. I added a light pinch of garlic powder and some Italian herb seasoning to give it more flavor. It was perfect. When done, gently fold (with a rubber spatula) the egg white mixture into the Cream cheese mixture. Be careful so the fluff doesnt deflate. (it will a tiny bit) Dont over mix. Preheat oven to 300 Place parchment paper on two baking sheets, coat generously with pan spray. I used an egg ring to scoop the mixture into and carefully wiggled it level with the back of a spoon. About two heaping TBSP per ring. Then I lifted ring off and carefully swirled the mixture out to create a bigger circle. Ending up with a 5 round that is about 3/4 thick. You can fit 5 on each tray and the batch stretches exactly to fill both trays with 5 rounds each if you evenly measure each time. Bake for exactly 30 minutes or until golden brown, placing trays in center of oven. Have a cooling rack or another tray ready with paper towels to cool them on. Remove very gently. During the 15 minute baking mark, I switch trays to opposite racks. While I am in the process of the switch, I give another light shot of pan spray to each round. if you follow exactly to the detail, they should turn out perfect. And its ridiculously easy to make these. Store them flat in a gallon zip lock baggie because it will keep it moist. They each weigh about 5 times less than a hamburger bun half. But they are durable for sandwiches, mini pizzas, etc, you can put cream cheese and jelly on them. You can even toast them and make garlic bread rounds to go with Italian dishes. They are also good dipped in flavored oils. If you make them take a picture and let me know how they turned out.
