Apple Piie Jam : 4 cups peeled diced apples, ( I use Granny Smith ) , 2 Tablespoons lemon juice, 1 1/4 teaspoon ground cinnamon, 1/4 teaspoon ground nutmeg , 1/4 teaspoon ground nutmeg, 1 box sure jell, 4 cups granulated sugar, 1 cup firmly packed brown sugar, 1/2 teaspoon unsalted butter....Dice apples and place in a 4 cup measuring cup.Cover apples with water to the 4cup mark ,.Place into large pot, add slices , lemon juice, butter, and sure jell and bring to full rolling boil. Slowly stir in sugars and return to a full rolling boil.Stirring constantly to avoid boiling over.Boil 1 minute...remove from heat and skim off off foam....ladle immediately into hot sterilized 1/2 pint jars leaving 1/4 inch head space...wipe rim of jars and put on flat and rings on tightly...place into hot water bath scanner , making sure water covers jars, bring water to a boil and process 10 minutes....remove jars and allow to cool upright for 12 hours....yeilds 6 1/2 pint jars...
