Baked chicken with Quinoa and Asparagus 5 spears asparagus 4oz boneless, skinless chicken breast 2 tsp extra virgin olive oil 1tsp chili powder 1 tsp cumin 1 tsp pepper 1/2 tsp salt 1 cup reduced-sodium chicken broth 1/2cup quinoa Preheat the oven to 400. Put asparagus in a bowl. Add chicken breast, then coat them both with olive oil and seasoning. Place chicken and asparagus on baking sheet and put in oven. Asparagus will take 10-15 minutes to become tender, chicken will take 22-25 minutes to cook through. Meanwhile, combine chicken broth and quinoa in small sauce pan. Bring to a boil, reduce heat, cover, and simmer for 20 minutes. This makes one serving, if you want to double it, double the ingredients. It is so good.:)
