This coleslaw is light, delicious and has a little kick...perfect with the Slow Cooker BBQ Chicken or on its own! ***************************************************************** Cilantro Cole Slaw Serves 8 A great light and tangy coleslaw, perfect for a BBQ chicken sandwich Prep Time - 10 min Total Time - 2 hr Ingredients 16 oz coleslaw mix 1 bunch fresh cilantro, stems cut off just under leaves 1/2 cup Nonfat Greek Yogurt 1/4 cup mayonnaise 2 limes, juiced 1 tbsp. chili powder 1 tsp salt 1 tbsp. pepper 1 tbsp. apple cider vinegar Instructions 1.In a blender, or food processor, combine cilantro, yogurt, mayo & lime juice until smooth 2.Add in chili powder, salt, pepper and vinegar and mix until combined 3.Taste and adjust seasoning as needed 4.Pour sauce into a small bowl, cover with plastic wrap and refrigerate for 1-2 hours to allow dressing to thicken 5.When ready to serve pour dressing over coleslaw in a large bowl and gently toss to combine 6.Serve immediately or chill in refrigerator for 15-20 minutes and then serve 7.ENJOY!!
