Chicken Hand Pies (8 pies, cut in 1/2 for less) Ingredients: 2-3 Chicken breast 2 Cans of Mixed Vegetables 2 Tbsp Olive Oil (or whatever you have) ½ White Onion (Medium) 1 Tbsp Butter 1 Tbsp All Purpose Flour 1 Can Chicken Broth 2 Pie Crust Boxes (I made 2 pies per roll, you can make them smaller. Also you can make an all wheat crust….i just didn’t want to take out the time to make it) Spices: Salt, Pepper, Italian Seasoning (I think ms. Dash Italian Seasoning)……you can use whatever you like 1 egg The Masterpiece Instructions: 1. Fry chicken breast in skillet with 1 Tbsp of olive oil on a medium heat. I used Italian seasoning, salt, and pepper to season the chicken. Cook until done. Cut the chicken into small cubes. You can also cook the chicken on a George Forman Grill. 2. Chop onion. Place in skillet with olive oil. Sauté until they are tender. Add butter and stir in flour. Let cook for about 2 minutes on medium heat. The mixture will look clumpy. Smash the clumps and add ½ can Chicken Broth in small amounts. Continue to work out the clumps if they are not the onions. When the flour has dissolved drain and add the cans of Vegetables. Add the other ½ of chicken broth. Taste the sauce for seasoning purpose. The mixture should be thick, but not too dry. Add cubed chicken then place in refrigerator until mixture is cool. The mixture is easier to deal with if it is cool (mine was still warm). Set out pie crust so they will be at room temp when you are ready. 3. When you are about 45 minutes out to have dinner on the table pre-heat oven to 450 degrees. Place parchment paper on a baking sheet. Roll out pie crust. Cut in half to make two pie crusts. Place one pie crust on the parchment paper. Fold in half just to see where the middle is. Slightly raise the edges of the crust where you will be placing the vegetable mixture to prevent a run off. Pinch the edges to seal all the way around. Then use a fork to slightly mash the edges together. Cut 2 incisions on the top of the pie. Brush on beaten egg (I put a little garlic powder with my egg for flavor). Repeat for other pies. Place in oven for about 15 minutes. They should be golden brown. 4.
