Confessions of a brewing addict: Yesterday we had an amazing time at Vanilla Jillss in the Whit.. Our beers turned out great and people were very receptive and super positive about what they drank. One bit of feedback had me a little convicted however. So here is the confession part. For those of you who have had our standard IPA in the past and appreciate its long, citrusy, draw with medium bitterness and light malt body ( perhaps just a smidgen above the pale ale range in reference to BJCP guidelines ) , a number of those folks commented on a slight decrease of flavor and aroma delivery compared to past experiences. We (I should say I) against better judgment decided to filter half of the batch in order for it to be ready for the event ( which previously had an earlier September date) and serve this at the event. The other portion was cold crashed and bottled for investors. While not entirely against filtration in certain circumstances with certain beers (IMHO), an IPA and most any beer for that matter should NOT be filtered. Beer is a delicate thing, it needs to be shown the patience and care it deserves in order to fully reward. Flavor design/development are a mix of art and science. Choices need to be made to protect the greatness of this time honored practice of brewing craft beer. So whats the take away? Make the right choice, and the reward is much sweeter in the long run.Make the wrong choice, and maybe most people dont notice ; but the art is compromised. My brother and I started this business with a high regard for quality. I can guarantee that this commitment will be upheld and pursued to great lengths. Thanks for listening to my long winded confession. I now feel purged and free from guilt ;-)
