Cranberry Pumpkin Cake, Ingredients: 1 box Spice Cake Mix 1 can Pumpkin ( 15 oz) 1 can Jellied Cranberry Sauce 1 cup of fresh cranberries (frozen) 1 bottle of Hersheys Carmel Topping 3/4 cup of cinnamon apple sauce 4 ounces butter (softened) (1 stick) 8 ounces cream cheese (room temperature) 2 cups powdered sugar ( 10 X ) 1 Teaspoon of Lemon Extract To Mix Cake: Preheat oven to 350 degrees. Grease & flour two 8 x 8 square cake pans. Mix together cake mix, eggs are called for on the box mix, the canned pumpkin and the jellied cranberry sauce. (Thats it, no other ingredients) Pour into 2 cake pans. Bake at 350 degrees for approx. 25 - 30 minutes or until cake is done. Cool. While cake is cooling mix the frosting. Mix together 4 ounces butter, 8 ounces cream cheese. Slowly add 2 cups of confectioners sugar (10X). Add lemon extract. Make sure that is very creamy and blended well. Set aside. After cake is cooled remove from pan. Spread the bottom layer with cinnamon apple sauce. Squeeze a small amount of Herseys Carmel topping on top of applesauce. Place second cake on top and cover with the cream cheese frosting. Place 1 cup of frozen cranberries in a blender or Ninja to slice up.
