#FiAwinterenergizer #week2 #Part-2 I followed Ravneet Kochar’s recipe of Potato Wedges for Minty sweet potato wedges. Ingredients: For Mint paste: 1 cup fresh mint ½ cup fresh coriander 2-3 cloves of garlic A handful of walnuts 1 tbsp Lemon Juice Salt to Taste For wedges: 2 Sweet Potato – washed, scrubbed clean, peeled and cut into wedges A pinch of salt 1 tbsp butter Oil for drizzle Cheese Sauce or grated cheese Method: Pre-heat your oven to 180C or 350F Take a large microwave proof bowl; put sweet potato wedges into it. Microwave them for about 8 minutes. Check if Sweet Potatoes are done by piercing a fork through one of the wedges. If not done, microwave again for two more minutes. While the wedges are getting done, in a grinder bowl, add all the ingredients for the mint paste, add little water and grind them till you get a smooth paste. Now, once wedges are done, bring them out of the microwave. Add the butter on the wedges, let the butter melt. Drizzle oil and mix it well. Take a baking tray and line it with foil or parchment paper. Now dip the wedges one by one into mint sauce and put it on baking tray. Place the tray into the oven, for 6-7 minutes or till one side gets crisp. Turn the wedges and again place them into the oven for another 6-7 minutes. Drizzle some cheese sauce or freshly grated cheese and serve them hawt!
