Flour Tortillas Recipe courtesy of Rosa Alba Covarrubia Email: Covarrubia@q Ingredients: 6 cups flour 4 ½ teaspoons baking powder 1 ½ teaspoon salt ¼ cup canola oil (or oil or shortening of your choice) 1 ¾ cup very hot water Directions: 1. Mix all dry ingredients in large bowl. Add oil and cut in with pastry blender until pea size. (Use two fork or your hands; your preference.) 2. Add water a little a time working it in; when all water has been added, knead dough counting to 100. (I know this might sound silly but it really does make a difference!) 3. Preheat cast iron griddle on low/medium heat (I highly recommend gas stove as electric produces uneven heat holding temperature.) 4. Make 20 – 24 balls and flatten (Figure 1) 5. Roll each ball out to a round circle (I roll out mine to 8” diameter but for starters, I recommend making smaller balls to roll out smaller circles until you get the hang of it. (Figure 2) 6. Place rolled out circle on griddle, cook 10 seconds on first side (Figure 3); cook 10 seconds on flip side; flip one more time and cook for 6 to 10 seconds (Figure 4). Place cooked tortillas on a clean cloth. Cool; store in twist tie bag and refrigerate. May also be frozen. NOTE: You can also use a stand mixer such as a Kitchen Aid but I recommend making them by hand a few times so you can get a feel of the dough. You have to be careful not to over knead if you plan to use the stand mixer.
