Food writer Pen Vogler whetted Hays appetite to dip into the novels of Jane Austen from a culinary viewpoint. In her book, ‘Dinner with Mr Darcy’, inspired by Mrs Bennett’s lavish meal in Pride and Prejudice, she explained how food was used as a means of showing off, of showing kindliness among neighbours, as part of the dynamics of family life, and for comic effect. Jane Austen wrote that “good apple pies are a considerate part of our domestic happiness”, but with the exception of Emma, her heroines show little interest in food; they are too spiritual to concern themselves with earthly matters. By contrast, the unsavoury characters are generally greedy and obese men. Vogler has recreated authentic recipes from Georgian times and adapted them for today’s cooks, so her book can help you produce “a whipt syllabub”, a hen’s nest, haunch of venison and marchpane hedgehog.
