For our first HellaSick Saturday Recipe: Mexican Hot Dogs. Need, 1) one cast iron frying pan (or reasonable facsimile); 2) Vegetable oil of some kind (one with a higher smoking temperature is better, not olive oil or anything that will burn easy); 3) corn tortillas (one per hot dog); 4) wooden toothpicks (one per hot dog); 5) wieners (yes, one per hot dog, and I prefer regular sized to jumbo sized). a) Heat oil (half inch to three quarters of an inch) in frying pan on medium heat. b) Preheat wiener either by boiling or microwave. Do not over cook them. c) With metal tongs (try to avoid using recruit flesh), dip tortilla in to hot oil until it begins to soften, remove from oil, letting oil run off of tortilla and back into frying pan, stack the oiled and warmed tortillas on a plate to the side. Prepare each tortilla in this manner. d) Being careful not to burn yourself (or the recruit) with the very hot oily tortillas, roll one of the pre-warmed wieners in a hot oily tortilla, and put a toothpick through it to secure the tortilla around the wiener. e) Place the tortilla wrapped wieners in your hot oil filled frying pan that is still on medium heat. They may touch while cooking... this is okay. After several minutes, turn hot dog over so the other side can cook.The crispiness of the tortilla is determined by oil temp and cook time. Cook them until they are the crispness you prefer. f) When removing with tongs (not recruit flesh), make sure you allow the mexican hot dogs to drain from each end back into the frying pan and place them on a plate lined with paper towels. Grab some ketchup and mustard, and you are ready to eat. Grab the mexican hot dog and dip it into condiment of your choice. Eat up. DO NOT ATTEMPT IF YOU ARE DRINKING ABBATINIS!!!!
