Fruit overload Cake Ingredients: 100 gms flour 1 tsp baking powder 100 gms butter 100 gms sugar 2 eggs 1 tbs Vanilla essence 1/4 cup milk 200 gms chopped mixed dry fruits/ peels of your choice 1 tbs flour Method: 1. Creme butter and sugar till light and fluffy 2. Add eggs one by one and beat well. Add vanilla essence. 3. Sieve flour with baking powder. Add the sieved flour gradually to the egg- butter mixture. Add the milk and mix well. Keep the cake batter aside. 4. Mix 1 tbs flour to the chopped fruit/ peels( the flour enables the fruits to be evenly distributed in the cake. Or else the fruits tend to stack up at the bottom of the cake ) mix the fruit mix to the prepared cake batter. Bake in a preheated oven 180 degrees for 35-40 mins or until a toothpick inserted in the middle of the cake comes out clean Tastes great with a cup of tea/ coffee
