Grain Free - Dairy-Free Chocolate Mousse Dairy-Free Chocolate Mousse What you need: ¼ cup water ¼ cup coconut sugar 1 cup chocolate chunks 4 eggs, separated ½ cup coconut cream from coconut milk Directions: 1.In a medium pot, heat water to boiling 2.Reduce heat, then stir in coconut sugar until dissolved 3.Remove pan from stove and cool coconut sugar mixture for 8 minutes 4.Add chocolate, stirring until melted 5.In a separate bowl, beat egg yolks until pale yellow 6.In another medium bowl beat egg whites to stiff peaks 7.Stir egg yolks into chocolate mixture (yes, into the pot) 8.Stir egg whites into chocolate-yolk mixture until well combined, then stir in coconut cream 9.Pour or spoon mousse into jars, then place in refrigerator overnight to set 10.Serve, grating some chocolate on top if desired
