Ham and egg toast baskets....what a cute breakfast idea :) Serves 2 As created by slimming eats with thanks Ingredients 4 slices of F&H bread 4 eggs 4 slices of ham salt and black pepper Frylight fresh parsley or chives Method Preheat oven to 200c or 400f (gas mark 6) Slices the crusts off your bread (but don’t throw them away, you can roughly chop the, spray with frylight and bake in the oven to use as croutons in a salad elsewhere in your day). Spray four holes on a muffin tray with some Frylight or Pam spray and push a slice of bread down into each hole, so you have a kind of bread basket. Spray over the top with some more Frylight or Pam spray and place in the oven and bake until lightly golden and crisp. Remove from oven, line each toast basket with a slice of ham and then crack an egg into each basket. Season with salt and black pepper and place back in the oven and bake until egg is cooked to your liking. Top with fresh chopped parsley and serve with some sauteed spinach or grilled mushrooms/tomatoes.
