How about some homemade crawfish etoufee! 1) saute 1 diced onion, 1 stalk celery, and 1 bell pepper in 1 stick of melted butter. Season with 1 teaspoonful each of salt and pepper 2) After about 5 minutes when onions are clear, add 1 pound of Louisiana crawfish with fat and cook for a few minutes. 3) Add 1 tablespoonful of flour and stir until butter/gravy thickens then add 1 cup of water and simmer for 20 to 30 minutes. Add additional water and seasoning if necessary (I like to add more cajun seasoning to taste) 4)Serve over hot rice and garnish with green onion and parsley 5)Enjoy!!
