Huckleberry Pie fresh out of the oven. I am going to write out the crust recipe because it is the best I have ever used and so darn easy to handle. Have not had one failure with it. 2 cups flour; 1 tablespoon sugar, 1/2 teas. salt, 3/4 cup shortening, 1 egg slightly beaten, 3 tablespoons cold water, 1 tablespoon white vinegar. Combine the flour, sugar & salt; cut in shortening until mixture resembles coarse crumbs (I use my hands to mix it up, so I can feel the texture that I want). Combine the egg, water & vinegar; stir into flour mixture just until moistened. (if you combine it right in the middle of the flour mixture and the stir -- it will mix easier and quicker) The more you handle the dough the tougher it becomes. Divide dough in half and roll out each half on a floured surface for the bottom and top crust. Once I have the filling in the crust. I brush the top crust with a tiny bit of milk and sprinkle sugar on it. Pie dough is fragile, so too much pullling on it can tear it -- you can see where I tried to patch it. I dont worry about spilling over because it always happens with huckleberry pie --- I fill the pie plate up.
