I have been trying to figure out what to do with my bumper crop of green beans (we used to call them snap beans when I was a kid on the farm) that I am suddenly covered up with! I didnt want to do the boring cliche of a green bean casserole and then I remembered once my sister in law made something with new potatoes and green beans in a creamy white gravy that was so good. btw, you can also substitute sweet peas instead of green beans. So here it is: Wish me luck! Green beans and potatoes in white cream gravy 4 medium red potatoes, cut into wedges 1 cup green beans 2 tablespoons butter 2 tablespoons flour 1 teaspoon salt 1/2 teaspoon pepper 1/2 teaspoon thyme 1 cup milk Directions: 1 Cook potatoes until tender. 2 Cook beans until tender. 3 Melt butter in saucepan; stir in flour, salt, pepper and thyme. 4 Slowly add milk. 5 Bring to a boil; boil 1 minute. 6 Drain potatoes and beans, place in a serving bowl. 7 Pour sauce over and mix well.
