In 1940, about 20 percent of the food consumed in this country was processed. Today it is close to 75 percent. [Note: book copyright 1996. I propose the percentage is higher today.] We consume the elements of our own destruction, with our excessive intake of sugar and unsaturated fats, loss of bulk or fiber, elimination of vitamins and minerals, and the pollution of food with chemicals never demonstrated to be safe.
