Interesting differences. My biggest bug-bear about eating eggs in the US, is that restaurants cant fry them properly. I have lost count of the amount of times I have asked for over medium fried eggs and got really runny eggs. I prefer my egg yolks slightly gelatinous but still moist just like the poached egg on the photograph below, common in the UK but hard to get here. The only exception is Mildreds in Lynn.
