Its almost hog killin time. Wonder if anyone raises them for the meat anymore. When I was young at home, we always had a hog or two. Kept them penned in and I always hated slopping the hogs after school. Usually in September wed floor a pen and feed it corn until early November then wed kill it. Always liked hog killin day, as mommy would always fix tenderloin and red eyed gravy and homemade catheads. OMG...I can taste it now! Us boys would help what we could with the killin and cleaning. Wed scrabble over the kidneys...wed wash em and put em on a stick and brile em over the fire that was heating the water to scrape the hog with. Mommy would render the lard and wed have skins and chitlins for weeks afterward. Daddy would usually salt cure the bacon and hams. Ive went to the shed many a time and sliced off some bacon for mommy. Then in Feb. wed do it again with another hog. Not sure very many people do this now. This was in the early 60s for me.
