Its sweltering hot here in Melbourne - almost 40 degrees Celsius. What better way to beat the heat than having a cool mango kulfi. This is one of the easiest mango kulfi recipes I came across, absolutely easy & fuss free and thankfully I had all the right ingredients in my pantry. For making this we need- 1 tin evaporated milk 1 tin condensed milk 1 cup (250ml) whipping cream 3-4 ripe mangoes Method: 1) Scoop out the pulp of the mangoes and make s purée 2) whip the cream till soft peaks form 3) Gently mix cream & mango pulp together 4) add evaporated milk to it 5) Next add condensed milk little by little till you get the right sweetness ( keep tasting as you add) 6) Mix everything together till well incorporated 7) spoon into the kulfi or Popsicle moulds. My moulds were small, so I used disposable plastic glasses to set the kulfi 8) It goes into the freezer for minimum 3-4 hours. 9) To release the kulfi, just dip it in lukewarm water for few seconds, it will come out Thats it! Easy 😊😊 Notes: - According to the dictionary, kulfi means: A dense ice cream of South Asian origin, typically made with boiled milk, sugar, cardamom, pistachios, and other ingredients. I did not add any nuts or cardamoms to it. We just wanted pure mango flavour 😊 - right now Im sitting on the beach & writing this post, the thought of mango Kulfi back home in my freezer is very refreshing ;)
