Ive been using this pizza dough recipe for a few years. I made some last night and its just as good as what you would find in a classic shop. I cut back to 1tsp of salt and just 1Tbsp of olive oil. You need high gluten flour for the elasticity. Walmart has King Arthur for $3.98 and I think they sell Pillsbury for a little less. I place a think pan upside down on the bottom rack of the over set at 500. I make up the pizza in a round pan and peel it right onto the pan. This gives you a crispy crust.
