Jennifers Whole Wheat Apple Muffins (Breakfast on the Go!) Ingredients: 2 cups of whole wheat flour (or 1 cup whole wheat flour and 1 cup of oat flour) 1 tablespoon baking powder 1/2 teaspoon salt 1.5 teaspoons of ground cinnamon 3/4 cup of nonfat/skim milk 2 egg whites (or 1 egg) 1/3 cup of unsweetened applesauce (or 1/4 cup vegetable oil) 1/4 cup honey (I used 1/2 cup of Stevia instead, you can also use 1/4 sugar, 1/4 Stevia - adjust to taste) 1 cup chopped apples Note: Feel free to add 1/4 cup of raisins or chopped nuts Directions: 1. Preheat your oven to 375 degrees F (190 degrees C). Lightly grease one 12-cup muffin tin. (I greased mine with a light nonfat spray) 2. Lightly whisk egg whites with fork or mixer. 3. In a separate bowl mix the dry ingredients thoroughly (flour, baking powder, salt, cinnamon) 4. In a separate bowl, mix remaining ingredients (Milk, applesauce, honey or sugar and chopped apples) . Gently fold in egg white. Add to the dry ingredients. Stir until all dry ingredients are moistened. Your batter will be lumpy. 5. Fill greased muffin tins two-thirds full.
