Jewish Penicillin You can cut down the amounts and cook this in a burton cooker or crock pot on the truck. I have used this soup for over 30 years and passed the receipe on to others…it really works for what ails you! 4 chicken thighs bone in...can use any fatty part of the chicken 1 head of garlic, clean cloves, can leave whole or crush (may add more if the head of garlic is small or you really like garlic) 1-2 large onions coarsely chopped 2 cups chopped celery 1 jalapeno pepper seeded, finely diced...may use more if you like it spicy. Use fresh jalapeno..do not use pickled ones. If they are not available, use 1 tsp of red pepper flakes or 1/2 tsp ground red pepper. 2-3 chicken bullion cubes...depends on how much salt you like. You can also use canned chicken broth instead of bullion cubes and water. 1-2 cups chopped carrots or one small package baby carrots 1 tsp black pepper 1 tbls of parsley DO NOT ADD SALT additional vegetables...zucchini, summer squash, cabbage, spinach, kale, turnip or mustard greens(whatever you like. I have used broccoli in it too)...dont put any of these in until last 1/2 hour of cooking You may add some fine noodles, rice or barley if the people eating it do hard manual work and are allowed them on diets...I never put too many in if at all. I some times put 1/2 tsp of ground ginger in...this adds to the flavor and the healing power. Cover the main ingredients with enough water to cover to about 2 inches, about 2 qts. Check to keep water level to about 2 inches above vegetables. Cook at low simmer until chicken is almost done and take out the chicken, cool it and debone it...chop the meat (keep the skin too...chop it up also) and return to kettle. At this time add additional vegetables and noodles. Cook an additional 1/2 hour. Taste for seasoning, it should taste very rich. This receipe makes about 3 qts of soup. It freezes well. If you have the stomach flu with or without diaherra...just drink the broth...save the meat and vegetables for shepards pie or something or wait to eat them when your stomach settles. If you have a cold, then drink the broth and eat the vegetables and meat. Have about 1 cup of the broth every few hours and eat the vegetables when you are hungry.
