Kuttu ki Roti/Parantha with mooli stuffing! For the dough: Peel and slice raw plantain or banana. Slice, sprinkle with water, cover with wet paper towel and microwave till soft. Mash till smooth and mix with Kuttu ka atta in the proportion of 1:1 along with some warm water, salt, red chilli pwdr, and chopped dhania to make a smooth soft dough. PS: you can also used boiled/ microwaved alu to make the dough. For the filling: Grate mooli, squeeze out as much juices as you can. Mix in salt, red chilli pwdr, grated ginger, chopped green chillies and fresh dhania. To bring it together: Divide dough into balls. Fill with mooli filling. Seal, roll out carefully, make roti/ Parantha as per your choice…..serve hot! We enjoyed the Kuttu ki roti with alu ki sabji, kheere ka raita, tamatar ki chutney and hari chutney!
